Impressive balance
The wine demonstrates an impressive balance between fruitiness and cool juiciness, which the special climate at a kilometer altitude in the eastern part of Ribera del Duero provides. The oak is beautifully integrated, and many flavor nuances emerge upon aeration/decanting. It surprises by being ready faster than the domain's top wines but will also continue to develop over the next 5 years. For good beef, roast lamb, rice dishes with meat and mushrooms, mature cheeses - and goat meat, which is used locally.
The grapes come from 80-100 year old vines in the cool zones of the Atauta Valley, and they are harvested quite early to preserve freshness and fermented in steel tanks and aged for 12 months in small French oak barriques, approx. 50% new, where the malolactic fermentation also takes place. Delicate but moderate tannins, dark berries, herbs, mocha, violet, black pepper and vanilla from the barrels. Fresh acidity nicely balances the dense fruit.

Dominion of Atauta
The town of Atauta is located in the Soria region in the eastern part of Ribera del Duero and has only about 1000 inhabitants but a long wine history. 600 years ago, the vineyards were built directly into the limestone cliffs. In 1999, Dominio de Atauta continued the tradition with a modern winery carved into the cliff side. From the outside, it looks like a modest farmhouse, but the house has 3 floors below it. On each floor, a step in the vinification process takes place. Gravity thus replaces pumps and transports the wine to the next stage of vinification one floor below.
